👉 Ingredients
- 1 liter full-fat milk
- 1/2 cup sugar (adjust according to your taste)
- 1/4 cup chopped nuts (almonds, pistachios)
- 1/4 teaspoon cardamom powder
- Saffron strands (optional)
- A pinch of nutmeg powder (optional)
👉Instructions
1. Boil the milk in a heavy-bottomed pan on medium heat, stirring occasionally to prevent it from sticking to the bottom.
2. Once the milk comes to a boil, reduce the heat and let it simmer. Keep stirring at intervals.
3. Add sugar to the milk and continue simmering on low heat until the milk reduces to almost half its original quantity. This process may take 45 minutes to an hour.
4. Add cardamom powder, saffron strands, and nutmeg powder. Stir well and continue to simmer until the mixture thickens to a desired consistency.
5. Add chopped nuts and mix them into the Basundi.
6. Turn off the heat and let it cool to room temperature.
